Olympia Oyster Bar Portland BLT Week 2019
Chef Maylin Chavez and her team have crafted a very special oyster dish and an amazing cocktail for Portland BLT Week.
The oyster dish – “Blue Corn Tostada Smoked Adobo Oyster” is marinated in adobo spices, slightly smoked, graced with a hint of honey, charred on one side & pan seared on the other side, and it is resting on a bed of mole blanco sitting on a Three Sisters Nixtamal tostado, and served with a dust of aleppo pepper, chili serrano, smoked avocado and pickled red onion.
The amazing cocktail – “Tomato Smokey Tequila Cocktail” is cherry tomato water, watermelon infused dry vermouth, tequila blanco, cocchi Americano, and smoked olive oil.
